Chuck’s Chicken Noodle Vegetable Soup

A tasty recipe for a soup that replaces some of the noodles with vegetables.  It is a delicious soup that you will enjoy and best of all it is balanced with starch, meat, and lots of vegetables.  This soup will fill you up and keep you full for hours.  

Chicken Vegetable Soup

This is a delicious soup that is very healthy for you. It is easy to make in slow cooker or crock pot.

Ingredients
  1. 1 pound of boneless, skinless chicken breasts
  2. 1 medium yellow onion, diced
  3. 1 cup of celery, sliced
  4. 1 cup of carrots, sliced
  5. 2 tbsp olive oil, divided
  6. 6 cups of 99% fat-free chicken broth (49 Oz)
  7. 4 cloves of garlic, minced
  8. 1/2 tsp dried basil
  9. 1/2 tsp dried oregano
  10. 1 pinch dried thyme (optional)
  11. 3 zucchini squash dices or cut into noodles using a spiral slicer
  12. 1 box of Barilla Farfalle Pasta
  13. salt to taste
  14. ground black pepper to taste

Instructions
  1. Heat one tablespoon olive oil in a large pot over medium-high heat.
  2. Coat the chicken with remaining tablespoon of olive oil. Bake the chicken in a glass pan covered with aluminum foil for 25 minutes at 375 degrees and allow to cool.
  3. Cube the chicken and place in a slow cooker or crock pot.
  4. Pour chicken broth into the slow cooker; add carrots, chicken, basil, oregano, thyme, zuccini, salt, pepper and pasta.
  5. Cook for approximately 4 hours on low settings or until the vegetables are tender. Stir every 30 minutes and add water as needed.
Notes
  1. It has 780 mg of sodium and 5.5 grams of fiber. I will post a picture soon.
