Recipe: Healthier Beef Nachos


Ok, it is college game day and of course, who does not like nachos on game day.  I made a healthier version.  

Healthier Beef Nachos

This a healthier version of nachos using bean chips instead of corn chips.

  1. 6 oz of 96% Lean Hamburger
  2. 1/2 Cup of Cheese, Colby & Monterey
  3. 2 Chili Peppers Chipotle In Adobo sauce
  4. 1/2 cup Beans, Black, Cooked, No Salt - Can replace with refried beans
  5. 4 tbsp of Salsa - mild, medium, or hot
  6. 1/4 cup of Onion, Red, Chopped
  7. 1 tbsp fresh chopped Cillantro
  8. 1 bag of Beanitos White Bean Chips
  9. Pinch of Salt, Kosher, Coarse
  10. 1 oz of Fresh Lime Juice
  11. 1/8 tsp of Pepper, Black, Ground
  12. 1-2 Fresh Jalepenos - sliced - can be pickled if you prefer
  13. Guacamole and sour cream optional - not included int he calories

  1. Cook ground beef.
  2. Preheat oven to broil.
  3. Add lime juice, salsa, adobe chiles, salt, and ground pepper into blender and process until completey blended.
  4. In a medium bowl add cooked beef, pour chipotle sauce over beef and stir to coat. Set aside.
  5. On a baking sheet spread out tortilla chips. Add 1/2 of cheese on top. Place in oven for 1 minute to melt cheese. Remove form oven.
  6. Evenly spread beef mixture, black beans, corn, red onion, and jalapeno over nachos. Add the rest of the cheese on top.
  7. Place back in oven to warm all your ingredients. It should be 1-2 minutes.
  8. Remove top with cilantro serve.
  9. Add sour cream and guacamole if you desire.
  1. This a great recipe for balanced snack during a game. It has a whopping 8 grams of fiber per serving. I adopted this from a chicken nacho recipe I found. I prefer beef so I made this recipe. Enjoy and share if you like it.
