A tender and juicy chicken recipe that is exploding with bold TexMex flavors.
It is great to spend a week at home and today I am making one of my family’s favorite meals. The best part is that is is a healthy meal that can jump-start your path to better health. The only weakness is it is a little high in salt. The goal is to get back into the swing of things, starting with eating better and saying a hard no to a midafternoon grazing.
This recipe is a mild recipe but you can spice it up with a little cumin or cayenne. This recipe is a delicious dish that I am sure you will love. This is a very healthy filling for tacos or fajitas. Give it a try and let me know if you like it.
A spicy and delicious dish with the mild tanginess of lime juice. The lime juice really accents the jalapeños.

Directions:
Place the chicken into a medium glass baking pan.
Add the black beans.
Spoon pepper and onion mixture on top.
Spoon 8-10 tbsp of salsa on top.
Add salt and pepper to taste.
Cover with aluminum foil.
Bake for 25-30 minutes.
You can serve with cheese and sour cream if you so desire.

- This recipe has less than 3500 calories per serving. The image is one I made on the grill, but it is equally good on the stove. If you make it on the drill, I put the beans on the side.
- You can easily make more portions. I have made this several times and eaten it alone and as a filling for tacos. This dish is high in fiber with 8-9 grams per serving.
You could make your own salsa. I used Pace Hot Salsa but you can adapt it to you own favorite brand.
