Recipe: Chile Lime Chicken with Salsa


This recipe is a delicious dish that I am sure you will love.  This is a very healthy filling for tacos or fajitas.  Give it a try and let me know if you like it. 

Chile Lime Chicken with Salsa
Serves 4
A spicy and delicious dish with the mild tanginess of lime juice. The lime juice really accents the jalapeños.

  1. 4-6 thin slice boneless, skinless chicken breast or about 16 oz
  2. 8-10 tbsp salsa, your choice of heat and thickness
  3. 1/4 cup red onion, chopped
  4. 3 jalapeño peppers, chopped
  5. Lime Juice 1 tbsp
  6. 2 tbsp lime zest
  7. black pepper
  8. salt, if needed
  9. 1 tbsp extra virgin olive oil
  10. 15 oz can black beans, drained

  1. Preheat oven to 375F.
  2. Heat the oil in a large frying pan and cook the chicken, onion, lime juice, lime zest and jalapeño. Cook over medium heat until chicken is lightly browned.
  3. Place the chicken into a medium glass baking pan.
  4. Add the black beans.
  5. Spoon pepper and onion mixture on top.
  6. Spoon 8-10 tbsp of salsa on top.
  7. Add salt and pepper to taste.
  8. Cover with aluminum foil.
  9. Bake for 25-30 minutes.
  10. You can serve with cheese and sour cream, if you so desire.
  1. You can easily make more portions. I have made this several times and eaten it alone and as a filling for tacos. This dish is high in fiber with 8-9 grams per serving.
  2. You could make your own salsa. I used Pace Hot Salsa but you can adapt it to you own favorite brand.
