Egg Taco: a simple breakfast treat you family will love.

This recipe is a very tasty breakfast meal that is easy to make. tacos are a key staple in Texas. I have grown fond of them during my time at Fort Hood. My family have grown to prefer them over a breakfast sandwich. I have seen them with sausage, egg or even smoked Brisket. The best breakfast tacos are the simplest and they are a great addition to any meal on the go and do not have to be limited to breakfast. I chose to use Oliverio pickled jalapeños and habanero jack cheese. I did not add meat, but you could early replace some of the egg with one or two meats.

Egg Taco

Ingredients:

 3 large eggs
 2 green onions chopped
 ¼ cup bell pepper chopped
 1 jalapeño pepper sliced vary amount based on desired flavor
 1 high fiber and low carbohydrate wrap / taco shell
 1 oz cheddar or Monterey Jack cheese

Directions:

Chop onions and bell pepper.

Slice jalapeño pepper.

In a bowl, scramble 3 eggs.

Cook eggs and vegetables in large skillet prepared with nonstick spray.

Add egg mixture and cheese to wrap.

Notes:
  1. This recipe has less than 500 calories per serving. You can add some salsa for flavor.
  2. I used jalepenos, but you can choose just about any peper you prefer.
