Recipe: Garlicky Chicken Linguine


I love garlic and developed this recipe after making many Italian-style recipes while being stationed away from my family.  My brother is a professionally trained chef and is my inspiration for this recipe.

Garlicky Chicken Linguine

This is a very tasty recipe if you like Italian pastas and garlic. Enjoy!

  1. Medium yellow onion, diced
  2. 1-2 tsp fresh oregano, chopped (may substitute dried)
  3. 2-4 cloves of garlic, minced or grated (to taste)
  4. 2 cans of Centos Italian whole tomatoes (28 ounces total)
  5. 1/2 pound of chicken cubed
  6. 2 servings of linguine pasta (4 ounces)
  7. 1-2 pinches of red pepper flakes (optional)
  8. Olive oil
  9. Salt
  10. Pepper
  11. Shredded parmesan

  1. Wash and dry all produce.
  2. Bring a large pot of salted water to a boil. Add pasta and boil for about 9-11 minutes depending on your personal taste. I like mine a little al dente, but you may like if softer.
  3. Heat 1 tsp of olive oil in a skillet on medium to high heat. Add onion, garlic, and oregano, cooking until softened. Add red paper seeds if desired. Add salt and pepper to taste.
  4. Season chicken with salt and pepper and sear in a separate skillet on medium heat for 5-6 minutes per side. Each side should be browned and internal temperature should be 165 F.
  5. Gently break apart canned tomatoes by hand and add them to the pan with the onion mixture. Lower temperature to medium to low heat. Cook until thickened or about 10-15 minutes. Add salt and pepper to taste.
  6. Add chicken to sauce.
  7. Drain water and toss drained pasta into pan with sauce and chicken. Gently stir mixture.
  8. Garnish with 1/4-1/2 oz of parmesan cheese and a sprig of oregano.
  1. This is a great recipe with about 540 calories and fiber is dependent on the pasta you choose. I use whole wheat which makes the fiber about 11 grams per serving.
