Recipe: Healthy Burrito Bowl

A healthy burrito bowl your family will love for dinner.

I absolutely love Chipotle’s burrito bowls so I trying to find a healthier option.  Although not a copy of the original, I am certain you will like this one.  My family loves this as a healthier option. It is not only healthy, but it is also easy to make.

This is a delicious dish that can be made as mild or spicy as you wish. I did not add sour cream or guacamole.

Burrito Bowl

Ingredients:

 1 Birdseye southwest style protein blends
 1 Goya Refried Pinto Beans with Chipotle
 24 oz Chicken Breast (cooked), no skin, roasted
 12 tbsp Ortega Picante Sauce
 2 tsp Adams Reserve Chimichurri Seasoning
 2 Jalapeno peppers sliced
 2 tbsp Salsa pewr serving
 2 tbsp Guacamole
 2 tbsp Sour Cream
 1 oz shreadded cheddar per bowl

Directions:

Cook chicken in a slow cooker or bake it in the oven. You can season it with some salsa or your favorite spice. I used Chimichurri seasoning as a drink rub and a little hot salsa. I cooked the chicken for 4 hours in a slow cooker. Once complete, shred chicken with a fork.

Cook Birdseye Southwest Protein Blend in Microwave. Place 1/4 cup of the mixture in each bowl.

Heat the refried beans in the microwave. I cooked it on high for 2 minutes. Add 1/4 cup of the refried beans per serving.

Add 4 ounces of the chicken per serving.

Add 1-2 tbsp of Picante per serving.

Add sour cream, cheese, and guacamole to taste.

Top with chopped jalapeno.

Notes:
  1. This recipe has less than 400 calories per serving. It is great as a bowl or as filling for burrito. 
  2. The nutrition is without sour cream and guacamole. Each serving as about 11.5 grams of fiber. It would be more if you add guacamole and sour cream.
